In a large bowl or zipseal bag combine olive oil, honey and mustard and season with salt and pepper.
Add the cubed chicken and mix well to coat. Cover or seal and leave to marinate for 2 hours, overnight or freeze at this point.
When you're ready to cook them, tread the chicken cubes onto skewers (I usually do 6 skewers from 4 chicken breasts).
Oven roast at 200°C 20 - 30 minutes, turning halfway.
