Parmesan Vinaigrette

Parmesan vinaigrette dressing is punchy, tangy and delicious – perfect to dress up a big ole green salad.

Parmesan Vinaigrette

I’ve never been much of a dressing person but (and this is where the story gets embarrassing), I’ve been catching up on Keeping up with the Kardashians episodes of late and feel like in just about every episode Kourtney is sitting eating a giant bowl of lettuce. Is it just me, are other people seeing this?!?!

I suddenly found myself really wanting a big ole green salad, chock-full of crispy lettuce… Diving in and consuming giant bowls of plain lettuce felt a little drastic (and unappetising to be honest), so I started playing around with some homemade dressings and here we are – parmesan vinaigrette.

Cucumber is also a nice addition to your bowl of greens and you can go for mixed greens or just keep it super simple with your favourite lettuce – quick, easy and a great side for any meal!

Parmesan Vinaigrette

Parmesan Vinaigrette Dressing
Ingredients
  • 1/3 cup grated parmesan
  • 3 tablespoons olive oil
  • 1 tablespoon white wine vinegar
  • 1/2 teaspoon crushed garlic
  • 1/2 teaspoon dijon mustard
  • salt and pepper, to season
Method
  1. Blitz all the ingredients together, dress your salad of choice and serve.
