I love homemade breads (fresh, warm and delicious – what’s not to love…) but rarely find the time to make them – this golden microwave corn bread to SO quick and easy to make and works really well as a braai or grilled meat side dish with some colourful salads!

We celebrate Heritage Day in South Africa tomorrow. It falls on a Monday this year – so we are in the middle of a glorious long weekend here with Joburg really showing off in the weather department. What better way than to celebrate with a braai and corn bread…

Microwave Corn Bread

This bread is SO quick and easy to make and works really well as a braai or grilled meat side dish with some colourful salads.

Ingredients
  • 2 tablespoons cake flour
  • 150 ml mealie meal
  • 100 ml oat bran (see note)
  • 1½ teaspoons baking powder
  • ½ teaspoon salt
  • 1½ teaspoons dried mustard powder
  • 1 teaspoon dried parsley or 1 tablespoon fresh parsley
  • 1 tablespoon canola oil
  • 3 eggs
  • ½ cup milk
  • 1 tin whole kernel corn rinsed and drained or 250g frozen corn
Method
  1. Coat a microwave safe dish with non-stick cooking spray.

  2. Combine the flour, mealie meal, oat bran, baking powder, salt, mustard powder and parsley.

  3. In a separate bowl or jug mix the oil, eggs and milk together. Add to the dry ingredients.

  4. Add the corn and mix well.
  5. Pour into the microwave dish and microwave at 70% power for 12 minutes, then 100% power for 2 minutes.
  6. Leave to stand for 10 minutes before serving.
Notes

You can sub in instant oats blitzed in the food processor
