I had such a lovely break over the weekend, really switched off: went out for brunch, did a spinning class, caught up with a friend, got on top of the washing and did some cleaning, got back on my my bicycle for a short ride with our team, went to friend’s for lunch (divine Korean food!)… Good food and a bit of a break and I’m full of recipe ideas and feel much more ready to tackle the week!
Big news is… (drumroll please…) I’ve been working hard in the background on the blog re-brand and THIS is the first post to appear first on the new re-branded site (YAY!). Welcome to my new inter-web home!!! With all the pottering going on in the background to close off the re-brand, this week’s menu is made up of quick and easy old favourites:
Monday: scrambled egg wraps: wholewheat wraps filled with scrambled egg, garlic & thyme mushrooms, crumbled feta, shredded lettuce, chopped tomato, spring onion and chives.
Tuesday: bolognaise and zoodles (savoury mince recipe here)
Thursday: salmon & leek pie served with a salad. I do a pastry top and leave out the base – removes the ‘soggy bottom’ stress and helps control your pastry portion – my version is based on this salmon and leek pie recipe from Pick n Pay.
Friday: burger Friday (assemble your own)
