Another in the series of budget bites – homemade marinades are a great way to trim on food spend, quick & easy honey mustard chicken skewers are a family favourite round here.
Our 3 year old is super into all food on a stick, so much so that we’ve got bento skewer accessories and food picks galore so that he can now eat just about anything on a tiny stick. Chicken kebabs are no exception, and he loves that the honey mustard sauce isn’t “spicy”!
- 4 chicken breasts, cubed
- 1 small onion cut into wedges (half onion, then cut into quarters)
- 4 tablespoons olive oil
- 4 tablespoons honey
- 4 tablespoons Dijon mustard
- salt and pepper, to season
In a large bowl or zipseal bag combine olive oil, honey and mustard and season with salt and pepper.
Add the cubed chicken and mix well to coat. Cover or seal and leave to marinate for 2 hours, overnight or freeze at this point.
When you're ready to cook them, tread the chicken cubes onto skewers (I usually do 6 skewers from 4 chicken breasts).
Oven roast at 200°C 20 - 30 minutes, turning halfway.
