These crumble bars are really my idea of an ideal elevenses nibble with a nice cup of tea… I also feel like they taste a little like jolly jammers (ahh childhood bliss) – you really can’t go wrong with these guys.
Crumble bars are easily tailored using different jams for a delicious, homemade, sweet snack. I’ve done them with apricot, strawberry, plum, plum & raspberry and cherry jam – all have been fabulous!
- 150 g softened butter or margarine
- 200 ml brown sugar
- 1 egg
- 1 teaspoon vanilla extract
- 2 cups cake flour
- 1 teaspoon baking powder
- 1 cup oats
- ½ teaspoon salt
- 200 ml jam e.g. apricot, strawberry, raspberry, etc.
Cream butter/margarine and sugar until light and fluffy.
Add egg and vanilla extract and mix well.
Sift in flour, baking powder and salt and mix well.
Add the oats and mix until it forms a soft, crumbly dough (get your hands involved towards the end).
Press ¾ of the dough into a baking tray coated with non-stick cooking spray (26 cm x 38 cm / 10 inch x 15 inch tray) using the back of a spoon – this takes a little while as you are aiming for a pretty thin layer.
Warm the jam slightly in the microwave to make it easier to spread and spread evenly over the dough.
Make a ball with the rest of the dough and grate it evenly over the jam layer.
Bake at 180°C for 20 – 25 minutes (until golden on the edges).
Cool for a few minutes and cut it into 40 bars – I use a pizza cutter with a knife to do the edges.
