Coffee Date Smoothie

See what I did there *wink* *wink*, coffee date smoothie = delicious and ever so literally a simple combo of coffee and dates. I am very partial to the idea of coffee in a smoothie – the ultimate on-the-go option combining my morning cuppa with my breakfast, that, and DATES… just delicious little gems of sweetness – yes please!

To soften the dates so they blend into my smoothie well, I roughly chop them and pop them in the hot coffee while it cools a little. In the meantime I throw together my packed lunch…or get dressed… or put on makeup – I am NOT a morning person, I leave getting up to the the very last second and then do everything at breakneck speed and/or all at the same time. This kind of fruity-caffeine combo is right up my street for weekday mornings.

Morning Coffee Date Smoothie
The ultimate on-the-go option, combining your morning cuppa and breakfast.

Ingredients
  • 100 ml strong coffee, cooled (see note)
  • 4 pitted dates
  • 100 ml milk
  • 1 small banana, frozen
  • 1-2 drops vanilla extract
Method
  1. Combine all the ingredients in a blender and blitz to desired consistency.
Notes

Soften pitted dates by placing them in the coffee while it cools (for 15 minutes or so, while you're throwing together your packed lunch), then blend for a sweet and delicious on-the-go breakfast.
