The theme for this month’s Recipe ReDux is A Vacation-Inspired Recipe:
Start unpacking your favourite vacation memories. Think about a trip you took locally or internationally and create a healthy recipe from an unforgettable meal you enjoyed. Or, create a recipe from a native ingredient you saw or tasted on your travels.
From 99 cent soft-serves on the Durban beachfront and bulk box of popsicles my mom used to buy each summer school holiday to gelato in Italy… ice cream features in all my vacation memories – local holidays, staycations and international trips – nothing says holiday to me quite like ice cream!
We moved into our first home at the end of last year (adult-ing hard!) and talk about little else other than our plans to decorate, renovate and pretty-fy our little spot. Needless to stay, it’ll be staycations for a good while, while we put all out pennies towards our grand plans. A leak meant that our home renovations needed to start with fixing the pool (yes, first world problem) – the job was finished just last week and I can barely wait for Summer now!!!
The weather on Sunday was just gorgeous, a real glimpse of warmer weather to come (can’t wait!) – so I whipped up these de-lites to enjoy around the pool (not quite warm enough to get in it, but nice enough outside to enjoy the glorious sunshine). Rich and delicious, with every bite of these tasty treats I can feel myself think of Summer holidays and relax a little…

- 1 cup milk
- 3 tablespoons cocoa powder, unsweetened
- 3 tablespoons peanut butter (choose no salt or sugar added option)
- 2½ tablespoons honey or sweetener of choice to taste

Blitz together all the ingredients in a blender.

Pour into popsicle molds

Freeze and enjoy!
