I have always liked kebabs, whether on the braai or popped in the oven for a quick weeknight dinner. But there’s nothing worse than biting into dry, bland chicken on a stick. These spicy cajun chicken skewers pack a flavour punch and work great as a meal prep option. The prepared kebabs freeze well or you could scrap the kebab skewers and make spicy chicken cubes for your lunches for the week…

Cajun Chicken Skewers
Servings: 4

Ingredients
  • 4 chicken breasts, cubed (approx 500g)
  • 2 tablespoons olive oil
  • 2 tablespoons brown sugar
  • 2 teaspoons lemon juice
  • 2 teaspoons paprika
  • 1 teaspoon crushed garlic
  • 1 teaspoon dried oreganum
  • ½ teaspoon cayenne pepper
  • ½ teaspoon salt
Method
  1. In a large bowl or zipseal bag combine olive oil, brown sugar, lemon juice, paprika, garlic, cayenne pepper and salt.

  2. Add the cubed chicken and mix well to coat. Cover or seal and leave to marinate for 2 hours, overnight or freeze at this point.

  3. When you're ready to cook them, tread the chicken cubes onto skewers (I usually do 6 skewers from 4 chicken breasts).

  4. Oven roast at 200°C 20 - 30 minutes, turning halfway.
