A local supermarket sells little pots of yoghurt with a fruit coulis layer to mix through, fellow South Africans, you know the one – either way, it is delicious! But, turns out, the fruity layer is really not hard at all to make yourself. And I dare say lower in sugar and far cheaper. One thing is for sure, berry coulis is certainly my current favourite way to use up stray strawberries about to go bad!
Alternatively, grab some frozen or fresh berries, and seriously, make a batch over the weekend – pop it in a jar and boy oh boy will you be pleased with yourself mid-week to have some vibrant jewel-coloured, fruity sweet delicious-ness to stir through your yoghurt! For a more decadent option, use your berry coulis to top a cheesecake or yoghurt panna cotta… bliss!
- 1 cup fresh or frozen berries (I used ½ cup fresh strawberries, chopped and ½ cup frozen blueberries)
- ¼ cup apple juice
- 1 teaspoon lemon juice
Combine the berries lemon juice and apple juice and bring to the boil. Lightly mash the berries with a fork.
Simmer for a few minutes until a runny jam consistency.
Cool and refrigerate until cold and syrupy.
Serve with plain yoghurt and fresh berries.
