As the year winds down it’s a nice chance to reflect on the year that was and start to plan for the year ahead. Looking back, without realizing it, 2015 seems to have been the year of chicken on the blog – chicken curry, chicken casserole, spice rubs for chicken…
- Posted 20 new blog posts/recipes
- Started the process of refreshing food images on some older posts
- Started displaying banner ads
- Had my first posts accepted to recipe sharing sites Tastespotting and Foodgawker and continue to work on my photography skills
All in an effort to continually improve the content shared on my little corner of the web.
Before we kick off 2016 I’ve gathered media highlights and top recipes for 2015, in case you missed any:

Chicken Gyros Seasoning: Use the rub to season chicken strips. Serve cooked chicken strips in pitas with tzatziki, tomato slices and diced onion – feels like I’m back in Greece!
Milk Tart: a South African classic for the Recipe ReDux Pie Love theme – sweet pastry crust, filled with a mild, creamy custard of milk, flour, sugar and eggs, topped with a dusting of cinnamon. I’ve scaled down the recipe, for a portion control redux but for a lower carbohydrate option, leave out the pastry, for a crustless milk tart.
Crustless Bacon & Mushroom Quiche: Delicious served warm with roasted veg or cold with a mixed salad, crustless quiche ditches the high fat pastry shell to focus on the good bit – the yummy filling…
Chicken & Chickpeas Curry: Cook once, eat twice dinners are perfect for busy week’s or when you need a night off. Curries are one of my favourite “two for one” options as they often taste even better the next day as the ingredients have had a chance to get to know eat other. I usually serve it with basmati rice and sambals on night one and in a wholewheat wrap with cottage cheese or guacamole, shredded lettuce, and chopped tomato & cucumber on night two. The curry also freezes very well.
Chocolate Trailmix Clusters: For me, you can’t get much better than chocolate and nuts! Extra chocolate around is not a problem we often face in our home – we did however have trailmix that I’d thrown together a while back that we had been munching through – and so these little morsels came about…
